Our Philosophy

A thousand-year-old tower is part of our space, gives us a name; it’s only fair to pay tribute and return to the gastronomic origins of Tarifa.

The gastronomic philosophy of La Taberna de Tarifa Tower is born from local farmers and producers, tuna hunters with techniques that span 3,000 years in Los Lances, farmers from the Tarifa countryside who care for their cows and pigs, eggs born from happy free-range hens, daily stews with local recipes, local preserves… returning to the origins.


Tarifa’s gastronomy is rich and generous in recipes and products. Week by week, we will add a new one. Gradually, we will discover them together to enhance, document, taste, and pair them, for example, with a good wine. We have 100 references on our menu.

In the heart of Tarifa, where the Puerta de Jerez was built, and today it’s the only place in Tarifa with a traffic light. It’s the place where we all know we have to pass (within a meeting point of seas and continents). It’s where you’ll find the Villanueva, the Taxi stand, and the avenue that ends at the sea.
